Fluffy Yogurt Pancakes with Honey Nut Granola

Makes: 8 pancakes


  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • ½ cup low-fat plain yogurt 
  • 1 egg, lightly beaten
  • 3 tbsp vegetable oil 
  • ½ cup Sweet Home Farm Honey Nut Granola

To Serve:

  • 1 cup fresh raspberries, blueberries or blackberries 
  • ½ cup low-fat plain or vanilla yogurt 
  • ½ cup Sweet Home Farm Honey Nut Granola
  • ¼ cup maple syrup or honey


  1. In large bowl, whisk flour, sugar, baking powder, baking soda and salt.
  2. In separate bowl, whisk milk, yogurt, egg and 1 tbsp of the vegetable oil.
  3. Stir into flour mixture just until combined. Fold in granola. 
  4. Lightly brush large nonstick skillet with some of the remaining oil; heat over medium heat.
  5. Using scant ¼ cup of batter per pancake, pour four pancakes into skillet.
  6. Cook for about 2 minutes or until bubbles appear on top and bottom is golden brown.
  7. Flip and cook for about 1 minute or until bottom is golden brown. 
  8. Repeat with remaining batter and oil. 

To Serve: Garnish pancakes with berries, yogurt, granola and maple syrup. 

Tip: If fresh berries are not in season, try serving pancakes with sautéed apples.
